A messy but really fun recipe to whip up in the kitchen (that will be a guaranteed hit with the kids) is our Mexican beef tacos. This recipe is really tasty and full of the goodness of fresh ingredients, that makes it a healthier option.
Prep Time: 10 minutes Cook time: 15 minutes Servings: 8
Ingredients:
500g ground beef
6-8 tortilla wraps
1/2 onion
1 garlic clove
1-2 teaspoons chili powder (I used crushed New Mexican)
1/4 teaspoon salt
Dash cumin (optional)
Dash oregano (optional)
Dash black pepper
2 tomatoes
Fresh lettuce
A few stems of fresh Coriander
Mild Tomato Salsa
Method
- Heat the oil over medium-high heat in a large frying pan. Add the onion and cook stirring for 2 minutes. Add the garlic and cook 1 minute. Add the beef, cook stirring and breaking the lumps up with a wooden spoon until the beef is browned (about 8-10 minutes). Add the seasoning (oregano, cumin, salt, pepper) and stir through.

Meanwhile, heat taco wraps in the microwave according to packet instructions.

To assemble, place some lettuce on the base of each taco. Top with beef mixture, tomatoes, tomato salsa and serve with coriander on top.
- If you're a cheese lover, this is your time to shine! Add as much over the top as you would like.
